Through a wide window, the open kitchen invites you to follow the chef's every gesture, at the very heart of dinner. The cuisine is contemporary and rooted in the local terroir, with the fruits of the sea taking pride of place: the day's catch from the La Rochelle fish market, salt from the neighbouring marshes, herbs and edible flowers gathered on the island.
